  • 8 oz/225 g white cane sugar
  • ¼ pt 150

Method

Rub a marble slab with a little olive oil. Dampen a pair of clean gardening gloves to protect the hands when handling the hot boiled sugar.

Lay a cloth dusted with rice flour beside the marble slab.

Stir the sugar into solution in the water in a small saucepan, until it is dissolved. Stop stirring, and leave the syrup to boil until it reaches 143°C/290°F on a sugar thermometer.<
