Desert truffles, faqqa in Arabic and donbalan-e zamini in Persian (literally “testicles of the earth”), were regarded as a precious delicacy in ancient times, particularly among the Romans. Found in the southern foothills of the Zagros Mountains, they are still prized as a treat during the rainy season. After the rains, locals in Evaz collected the truffles as part of a day of picnicking with whole family. I've adapted this kuku/frittata made with truffles from one by Halimeh
