My Father’s Sunday Spaghetti with Tuna Fish Sauce

Ingredients: 3 tbsp olive oil; 200 g (7 oz/2 cups) freshly grated Parmesan cheese; basil leaves, to garnish; 1 onion, very finely chopped; 2 tbsp tomato purée (paste); 1 clove of garlic, very finely chopped; 300 ml (10 fl oz/1¼ cups) tomato passata; 1 tsp pink Himalayan salt or sea salt; 2 tsp salt; 500 g (1 lb 2 oz) dried spaghetti; drizzle of olive oil; 3 tbsp tomato ketchup (or more for sweetness; especially for the kids); 400–500 g (14 oz–1 lb 2 oz) tuna fillets in olive oil (I like Brindisa Ortiz and use 2 × 220 g (8 oz) jars); freshly ground black pepper; 6 basil leaves, torn; 300 ml (10 fl oz/1⅓ cups) single (light) cream
