Method

Preparation

THE LENTILS: Pick, wash in running water and pat dry.

Cooking

Heat oil in a kadhai, add asafoetida and stir over low heat until it swells. Remove the asafoetida, add the dals and stir until golden brown. Remove the dals, add the red chillies and stir until crisp, remove.
