  • 3 red cherry tomatoes, sliced
  • 3 yellow cherry tomatoes, sliced
  • Olive oil
  • Salt and freshly ground

Method

Arrange the tomato slices on the bruschetta or crostini, drizzle with a little olive oil and sprinkle with salt and pepper to taste. Top with the prawns and garnish with coriander leaves.
