  • 1 yellow pepper
  • 1 small red onion, quartered

Method

Roast the peppers and onion. Cut the peppers into thin strips, discarding the cores and seeds. Arrange on the bruschetta or crostini, fanning the onion wedges slightly. Drizzle with a little olive oil. Finish with olives, pine nuts, basil and Parmesan curls.
