A refreshing salad of melon, mango, pineapple and kiwi in a spiced syrup is served in individual melon cups, topped with melon sorbet. The edges of the melons are attractively vandyked, a quintessentially French technique.


  • 4 ripe but firm small cantaloupe melons
  • 2 ripe mangos

Prepare the melons and set the melon balls aside. Chill the melon cups in the refrigerator until ready to serve. Make the melon sorbet. Dice the mangos into cubes the same size as the melon balls, using the hedgehog method.
