  • 500 g (1 lb 2 oz) potatoes, peeled and cut into 1 cm (½ inch) slices

  1. Put the potato slices in a large saucepan, cover with cold water and bring to the boil over high heat. Boil for 5 minutes, then drain and set aside.
  2. Put the oil in a deep-sided non-stick frying pan over medium heat. Add the onion and garlic and cook for 5 minutes, or until the onion softens.
