Beat 500 g (1 lb 2 oz) fromage blanc (fromage frais) or curd cheese with a wooden spoon. Add 2 tablespoons olive oil and 1 finely chopped garlic clove and beat into the cheese. Add 2 tablespoons chopped chervil, 4 tablespoons chopped parsley, 2 tablespoons chopped chives, 1 tablespoon chopped tarragon and 4 finely chopped French shallots and mix together well. Season and serve with toast or bread, perhaps after dessert, as you would cheese and biscuits.
