- Preheat the oven to 180°C (350°F/Gas 4). Put the feta in a bowl and mash with a fork. Add the gruyère, egg and pepper and mix.
- Cut the filo sheets in halves widthways. Keep the unused pastry covered with a damp tea towel to prevent it dry
