Japanese in origin, yakitori (meaning ‘grilled chicken’) is made with pieces of chicken, sometimes interspersed with leek or spring onion, threaded onto skewers. These are basted in a marinade and traditionally grilled over charcoals.

Ingredients

  • 100 ml ( fl oz) Japanese soy sauce
  • 2 tablespoons mirin

Method

  1. Soak eight wooden skewers in water for 30 minutes to prevent them burning.
  2. Put the soy sauce, mirin, oil, sake and sugar in a saucepan and bring to the boil, stirring. Turn off the heat and allow the marinade to cool. Transfer half the marinade to a bowl, large enough to fit the chicken skewers.
