Chilli Dressing

  • ½ teaspoon chilli flakes
  • tablespoons fish sauce
  • 1

Method

  1. To make the chilli dressing, put the chilli flakes in a frying pan and dry-fry over medium heat for 30 seconds, then grind to a powder using a mortar and pestle or spice grinder. Put the powder in a small bowl with the fish sauce, lime juice and sugar. Mix well to dissolve the sugar and set aside.
  2. Remove the flesh from the duck, cut it into bitesi
