  • 2 sweet corn cobs
  • 2 tomatoes, diced
  • 1 Lebanese (short) cucumber, diced

Method

  1. Cook the corn in a saucepan of boiling water for 5 minutes, or until tender. Remove the kernels using a knife and place in a bowl with the tomato, cucumber and coriander. Season and mix well.
