Method

  1. Heat half the oil in a large flameproof casserole dish. Add the onion, garlic and celery and cook, stirring from time to time, over low heat for 6–8 minutes, or until the onion is golden.
  2. Add the pancetta and mushrooms, increase the heat and cook, stirring occasionally, for 4–5 minutes. Spoon onto a plate and set aside.
