  • 1 tablespoon oil
  • 1 onion, finely chopped
  • 2 cardamom pods


  1. Heat the oil in a heavy-based saucepan over low heat. Add the onion and cardamom pods and fry until the onion is soft and starting to brown.
  2. Add the garlic to the saucepan, cook for 1 minute then add the tomatoes and cook until the paste is thick.
  3. Add the cinnamon, garam masala, chilli powder and sugar to the pan and cook for 1 minute. S
