Koreans believe in the harmony of the Five Flavours — hot, bitter, sweet, soru and salty — and this is reflected in their use of flavourings such as chilli, spring onions, ginger, vinegar, soya bean paste and sesame oil. Colour is also important and cooks attempt to incorporate the Five Colours — red, green, yellow, white and black — into each meal. The Korean peninsula has been populated since 3000 BC and invaded repeatedly, by the Mongolians, Chinese and, most notoriously, the Japanese, w
