  1. Preheat the oven to 180°C (350°F/Gas 4). Trim the pork of fat or sinew. Tie with kitchen string at intervals so the pork keeps its shape.
  2. Heat the butter and oil in a frying pan and cook the pork until lightly browned all over. Lift out t
