  • 4 × 4-cutlet racks of lamb

  1. Preheat the oven to 200°C (400°F/Gas 6). Trim the lamb, leaving a thin layer of fat, and clean any meat or sinew from the ends of the bones with a small sharp knife. Cover the bones with foil. Place on a rack in a roasting tin.
  2. Mix the mi
