A navarin is a hearty stew made of mutton or lamb with potatoes and other root vegetables, traditionally turnips. (The name is thought to come from the French for turnip: ‘navet’.) Navarin à la printanière is traditionally made to welcome spring and the new crop of young vegetables. Of course, navarins can be made all year round, using older winter root vegetables instead.
