  • 30 g (1 oz) butter
  • 1 tablespoon plain (all-purpose) flou


  1. Melt the butter in a small saucepan. Stir in the flour and cook for 2 minutes. Remove from the heat and slowly add the hot milk. Return the pan to medium heat and stir until the mixture boils and thickens. Season with salt, pepper and cayenne pepper. Simmer for 2 minutes, stirring occasionally. Remove from the heat.
