  1. Prepare the clams and discard any broken or open ones (step 1, opposite).
  2. Heat a wok over high heat, add the oil and heat until very hot. Add the garlic and ginger and stir-fry for 30 seconds, then add the bean sauce and clams and toss to combine.
  3. Pour in the stock and stir for 3 minutes, or until the clams have opened, discarding any th
