This is the traditional way to enjoy fresh crab in Britain. The crab is presented in the cleaned top crab shell.

Ingredients

  • 1 mud crab, about 1 kg (2 lb 4 oz

Method

  1. Using your thumb as a lever, pull the top shell of the crab away from the bottom shell.
  2. Remove the feathery gills and stomach sac, and snap off the mouth. Pick the meat out of the shells, keeping the white and dark meat separate. Remove and crack the claws and take out any meat. Wash and dry the top shell well.
  3. Finely chop the dark meat
