  • 4 × 175 g (6 oz) salmon fillets
  • 1 tablespoon vegetable oil

Method

  1. Check the salmon carefully for bones, pulling out any you find with clean tweezers. Season lightly with salt.
  2. Heat the oils in a large heavy-based frying pan over medium-high heat. Add the salmon pieces, skin side down, and cook for 3 minutes, or until the skin is golden. Reduce the heat to medium, turn the fish over and cook for a further 2–3
