Ingredients

  • 2–3 tablespoons plain (all-purpose) flour
  • 4 firm white fish fillets
  • olive oil, for shallow-frying

Method

  1. Sift the flour with a little salt and pepper onto a plate. Pat the fish dry and coat both sides with the flour, shaking off any excess.
  2. Heat about 3 mm
