  • 125 g ( oz/1 cup) self-raising flour

Method

  1. Sift the flour into a large bowl, make a well in the centre and gradually whisk in the water to make a smooth batter. Leave to stand for 5 minutes.
  2. Beat the egg whites in a small clean bowl with electric beaters until stiff peaks form, then fold into the batter in two batches. Use immediately.
