400 g (14 oz/2 cups) basmati rice
Wash the rice thoroughly, cover with cold water and soak for 30 minutes. Drain.
Heat the butter in a frying pan over low heat until it melts. Add the bay leaves and washed rice, and cook, stirring, for 6 minutes, or until all the moisture has evaporated.
Soak the saffron in 2
