  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 400 g (


  1. Heat the oil in a large saucepan and add the onion. Cook for 5–6 minutes over medium heat, or until soft.
  2. Add the rice and cook for 2 minutes, then add the stock and bring to the boil. Reduce the heat, cover and simmer for 15 minutes, or until all the liquid has absorbed and the rice is cooked. Stir in the mint and season with salt and pepper.<
