  • 1 Lebanese (short) cucumber
  • 2 celery stalks, thinly sliced
  • 1 French shallot, diced


  1. To make the salad, peel the cucumber and cut in half lengthways. Using a teaspoon, scoop out and discard the seeds. Slice very thinly and put in a large bowl. Add the celery, shallot, avocado, radish and coriander.
  2. To make the dressing, put the oil, lime juice, lime zest, garlic and honey in a small bowl and mix well. Season with sea salt and f
