  • 1 large tomato
  • 1 Lebanese (short) cucumber
  • 2 radishes
  • 1


  1. Chop the tomato and cut the cucumber into rounds. Thinly slice the radishes and onion, and cut the feta cheese into small cubes.
  2. Combine the prepared tomato, cucumber, radishes, onion, feta and olives in a serving bowl. Drizzle with the combined lemon juice, olive oil and oregano. Serve on a bed of coral lettuce if you like.
