  • 3 large red capsicums (peppers)
  • 4 spring onions (scallions), chopped

  1. Grill (broil) the capsicums under high heat for 10 minutes, turning often, until the skin blisters and blackens. When cool, peel then remove the seeds and roughly chop (see left).
  2. Put the capsicums into a food processor and add the spring onion, garlic and chilli. Process until smooth. Transfer to a saucepan and stir in the lime juice and coria
