  • 1 tablespoon vegetable or peanut oil
  • 1 red onion, cut into thin wedges

Method

  1. Heat a wok over high heat, add the oil and swirl to coat. Stir-fry the onion for 2 minutes, or until softened. Add the garlic and chill jam and cook for 30 seconds. Add the vegetables and stir-fry for a further 2 minutes.
