  1. Heat the oil in a large, heavy-based frying pan. Add the mushrooms and cook over high heat for 5 minutes, or until slightly softened and golden. Season the mushrooms with salt while they are cooking. Add the garlic and cook for 1 minute. Stir in the sugar, vinegar and 1 table
