This combination of two emblematic ingredients of Spanish cooking — chorizo sausage and chickpeas — provides a simple but satisfying hearty tapas dish.

Method

  1. Put the chickpeas in a large bowl, cover with water and soak overnight. Drain, then put in a large saucepan with the bay leaf, cloves, cinnamon stick and stock. Cover completely with water, bring to the boil, then reduce the heat and simmer for 1 hour, or until the chickpeas are tender. If they need more time, add a little more water. There should be jus
