  • 200 g (7 oz/1 cup) dried haricot beans (see Note)

Method

  1. Put the beans in a large bowl, cover with cold water and soak overnight. Rinse well, then transfer to a saucepan, cover with cold water, bring to the boil and simmer for 45 minutes, or until just tender. Drain and set aside.
  2. Heat the oil in a large saucepan. Cook the garlic and onion over medium heat for 2–3 minutes, or until the onion is soft.
