  • 200 g (7 oz/1 cup) brown rice

Method

  1. Bring a large saucepan of water to the boil. Add 1 teaspoon salt and ther ice, and cook for 20 minutes, or until tender. Drain and refresh under cold water.
  2. Meanwhile, cut the tomatoes in half horizontally and squeeze out the seeds or scoop them out
