A refreshing yoghurt drink popular in India and the Middle East, lassi is often flavoured with mango or rosewater, or with herbs and spices such as cumin or mint. Lassi is the ideal drink to have with curries as the fat in the yoghurt helps dissolve the fiery hot capsaicin found in chillies. When making lassi, use creamy, full-fat yoghurt because the ice will dilute its flavour.
