Translated as ‘English soup’, zuppa inglese is the Italian version of a trifle — so heavily covered in custard that it looks like a soup. Some versions are made with macaroons instead of sponge cake.



  • 6 large egg yolks
  • 115 g (4 oz/½ cup)


  1. To make the custard, whisk the egg yolks with the sugar until pale and fluffy. Add the cornflour and flour and mix well. Put the milk in a saucepan with the vanilla bean and bring just to the boil. Pour into the egg mixture, whisking as you do so. Pour the custard back into the cleaned saucepan and gently bring to the boil, stirring. Once the mixture is jus
