Translated as ‘English soup’, zuppa inglese is the Italian version of a trifle — so heavily covered in custard that it looks like a soup. Some versions are made with macaroons instead of sponge cake.

Ingredients

Custard

  • 6 large egg yolks
  • 115 g (4 oz/½ cup)

Method

  1. To make the custard, whisk the egg yolks with the sugar until pale and fluffy. Add the cornflour and flour and mix well. Put the milk in a saucepan with the vanilla bean and bring just to the boil. Pour into the egg mixture, whisking as you do so.
