Meringue nests, once cooled, can be filled with thick custard or whipped cream, and topped with sliced fresh fruit or stewed rhubarb or apple. Alternatively, pipe the meringue into small mounds using a star nozzle (pictured opposite), and serve plain or sandwiched together with whipped cream.
