  • 300 g (10½ oz) hazelnuts
  • 8 egg whites, at room temperature

Method

  1. Preheat the oven to 180°C (350°F/Gas 4). Roast the hazelnuts on a baking tray for 5–10 minutes, or until golden. Tip the nuts onto a tea towel and rub vigorously to remove the skins. Transfer to a food processor and chop until finely ground.
