Blinis are small yeast savoury pancakes originally from Russia and make from buckwheat flour. Traditionally they are topped with sour cream and strips of smoked salmon or caviar, or for sweet toppings try homemade fruit jams with crème fraîche, or mascarpone cheese and thinly sliced pear.


  • 200 g (7 oz/ cups) buckwheat flour

  1. Sift the buckwheat and plain flours into a large non-metallic bowl. Add the yeast and a pinch of salt and mix well. Make a well in the centre and pour in the warm milk. Mix to a batter and beat for a couple of minutes to get rid of any lumps. Cover the bowl with plastic wrap and leave to rise for 1–2 hours, by which stage it should have formed a bubbly batt
