500 g (1 lb 2 oz) strawberries, hulled and halved
- Put the strawberries in a glass bowl. Heat the balsamic vinegar, sugar and lemon juice in a small saucepan, stirring until combined. Remove from the heat and leave to cool.
- Pour the balsamic vinegar mixture over the strawberries, add the mint and toss. Cover with plastic wrap and marinate in the fridge for at least 1 hour.
