  • 500 g (1 lb 2 oz) strawberries, hulled and halved

  1. Put the strawberries in a glass bowl. Heat the balsamic vinegar, sugar and lemon juice in a small saucepan, stirring until combined. Remove from the heat and leave to cool.
  2. Pour the balsamic vinegar mixture over the strawberries, add the mint and toss. Cover with plastic wrap and marinate in the fridge for at least 1 hour.
