  1. Put the milk, coconut cream, lime zest, lime juice and lime leaves in a large saucepan and bring to the boil. Add the rice and stir to combine. Reduce the heat to low and simmer, stirring occasionally, for 25–30 minutes, or until the rice is tender.
  2. Remove the saucepan from the heat and add the sugar, stirring until the sugar has dissolved and the
