The base of a parfait is an egg custard to which cream and flavourings such as coffee (its traditional flavour), alcohol, fruit or chocolate are added. The mixture is poured into a loaf tin or the traditional parfait tin. An American parfait is similar to an ice-cream sundae.


  • 1 tablespoon instant espresso coffee
  • 150 g ( oz) sugar


  1. Combine the coffee and sugar in a pan with 200 ml (7 fl oz) water and dissolve over low heat.
  2. Put the egg yolks in a heatproof bowl and whisk until pale and
