Turkish delight is the Western name for rahat lokum, meaning ‘rest for the throat‘. The sweet is made by slowly boiling a mixture of syrup and cornflour, sometimes with honey, fruit juice or mastic until gummy and gel-like. The mixture is often flavoured with orange or rosewater or mint, or may include nuts such as pistachios or almonds. The set mixture is cut into squares and rolled in icing sugar.
