This is such a good basic dough, easy to roil out, and rich with the “cheesecake” flavors of lemon and cream cheese, that it shouldn’t be saved only for children’s parties. But it is ideal for creating animals with distinctive touches: Pressing the dough through a (well-washed) garlic press creates “lions’ manes” and “sheep’s wool.” (An alternative: Kids can cut out faces, using the garlic press to make “hair,” and candies, as suggested for the Cookie Party, for eyes, etc.) For non-animal cookies, knead ¼ cup dried currants into the dough after removing it from the food processor in Step 1, and cut out shells, rounds, or any other simple shapes.
