Devonshire Teacakes


  • 1 lb. (½ k.) flour
  • a pinch of salt
  • ½ teaspoon cinnamon
  • 2 oz. (60 g.) butter
  • 3 oz. (90 g.) caster sugar
  • 3 tablespoons milk
  • ½ oz. (15 g.) yeast
  • 2 oz. (60 g.) sultanas


Mix the salt and cinnamon with the flour, rub in the butter, stir in the sugar, mix well. Warm the milk and dissolve the yeast in it. Make a hole in the middle of the flour, pour in the yeast and milk, and form into a dough. Add a little more milk if necessary. Stand it in a warm place for 1 hour.

Then knead in the sultanas. Divide the dough into small pieces. Form into buns and leave to rise for half an hour before baking in a hot oven, 425° F., gas mark 7, for 15 minutes.

Serve hot with butter.
