Plain Scones


  • ½ lb. (240 g.) flour
  • 2 teaspoons caster sugar
  • 1 teaspoon salt
  • 2 oz. (60 g.) butter
  • a little milk to mix


Rub the butter into the flour and mix in the sugar and salt. Mix to a stiff dough with a very little milk. Knead for a minute on a floured board and then roll out ¾ inch (2 cm.) thick. Cut into rounds with a cutter or into triangles with a knife. Place on a floured tin and bake in a hot oven, 400° F., gas mark 6, for 10–15 minutes.

Eat hot with plenty of butter or with clotted cream and jam. May be split and toasted the day after they were made.
