Veal Escalopes

Name: Veal Escalopes
Ingredients: Put a piece of butter into the hot frying pan. Let it melt and then smoke. Lay in the escalopes; let them cook for two minutes. Turn them. Let them brown for two minutes. Turn them again and let them cook three minutes more.; Put a little flour in a plate. Dip the two escalopes in the flour, seeing that they are well covered. Press the flour onto the meat with your finger tips. But only do this at the moment when you put the frying pan on the gas. The moisture in the meat must not penetrate the flour.
