Chilli Oil/Chilli Dipping Sauce


  • 2 tablespoons chopped dried red chillies
  • 1 tablespoon whole unroasted Sichuan peppercorns
  • 2 tablespoons whole black beans
  • 150 ml (5 fl oz) groundnut (peanut) oil


Heat a wok over a high heat and add the oil and the rest of the ingredients. Cook over a low heat for about 10 minutes. Allow the mixture to cool undisturbed and then pour it into a jar. Let the mixture sit for 2 days, and then strain the oil. It will keep indefinitely.
