After peeling and preparing the uncooked prawns as instructed above, rinse them three times in 1 tablespoon of salt to 1.2 litres (2 pints) cold water, changing the mixture of salt and water each time. This process helps to firm the texture of the prawns and also gives them a crystalline clean taste.
